“Gamula”, “teterya”, “vereshchak” and “salamata” are the names of dishes that have long been cooked in Ukraine and can be confidently called traditional Ukrainian cuisine. But over time, these recipes have disappeared, radically changing our perception of the peculiarities of national cuisine. Also, many dishes are actually radically Ukrainian, but their real names are different. For example, “deruny” used to be called “tertuhy”, and “holodets” is “dragli”, cutlets are “sichenyky”. There are many other dishes that were cooked in Ukraine a long time ago and were truly Ukrainian but are forgotten now.
Once studied an old book of recipes it is possible to find a description of a tender white cheese called NABIL.
NABIL is a special ancient Ukrainian FETA-type cheese that was forgotten by Ukrainians. It is made according to an ancient recipe, but on modern equipment, and from fresh milk of local cows, sheep and goats, which are fed on the best Ukrainian meadows. The new modern but authentic recipe makes NABIL’s taste very soft and delicate, just the kind that Ukrainians like the most. NABIL is white cheese from the heart of Ukrainian traditions.

ABOUT NABIL

At the end of 2020 five key producers’ associations which unite FETA producers signed a Memorandum of Understanding with Project “Support to the development of a geographical indications system in Ukraine” about recognition of the new NABIL name and their further common work on FETA rebranding.
The precondition for FETA rebranding is undertaken by Ukraine obligations under the Association Agreement between Ukraine and the EU. Article 208 of this Agreement provides a transitional period for the use of geographical indications for three cheeses, in particular FETA, which is ending on 31 December 2022.
But it's not just a name change – it is a concept change. After all, FETA, which is produced in Ukraine, is not similar to FETA, which is protected by geographical indications in Greece. Our cheese is different, so the name should be our, Ukrainian.

Light salad with Nabil cheese

Ingredients

  • Beets - 1 pc.
  • Fresh salad (or a mix of greens) - 100 g
  • Nabil cheese - 100 g.
  • Walnuts - 4 pcs.
  • Honey - 1 tb.sp.
  • Olive oil - 1 tb.sp.
  • Lemon juice - 1 tb.sp.
  • Mustard - 1 tb.sp.
  • Salt and pepper to taste

Method of cooking

It is necessary to boil or bake beets, we recommend baking, because it stores more vitamins. Cut it into small bars. To prepare the sauce, mix the oil (olive can be replaced with any other that you like), honey, mustard, lemon juice, salt and pepper and grind the mixture until smooth. It is better to fry the nuts a little in a pan and chop. Put lettuce, chopped beets and sauce on a plate, add chopped walnuts. Nabil cheese will add a special spiciness to this salad.

Broccoli and cheese pie Nabil

Ingredients

    For the dough:

  • Butter - 150 g
  • Sour cream - 1 tbsp.
  • Salt - 1 pinch
  • Chicken eggs - 1 pc.

    For the filling:

  • Broccoli - 400 g
  • Nabil cheese - 70 g.

    To fill:

  • Sour cream - 1 tbsp.
  • Hard cheese - 100 g.
  • Chicken eggs - 4 pcs.

Method of cooking

It is necessary to knead the dough and lay it out in the form, forming sides of 3-4 cm. First, mix the egg with soft butter, sour cream and salt, and then gradually add flour. Before baking, the dough should be placed in the refrigerator for 20 minutes. To prepare the filling, mix eggs with sour cream and add grated cheese. Pour the filling over the dough, then spread the broccoli and stuffing. Broccoli is recommended to use frozen or fresh broccoli should be pre-cooked weld to incomplete readiness. Bake this cake for 40-45 minutes at 180 ° C.

Baked vegetables with Nabil cheese

Ingredients

  • Eggplant - 300 g.
  • Tomatoes - 200 g
  • Garlic - 1 clove
  • Nabil cheese - 100 g.
  • Vegetable oil - 3 tbsp.
  • Salt and pepper to taste

Method of cooking

Cut tomatoes and eggplant into thin rings, pre-cleaned. Chop garlic and Nabil cheese. In a pre-greased baking dish, lay out rows of vegetables and cheese. First eggplant, then tomatoes, a little Nabil and garlic. Sprinkle with oil, add salt and pepper to taste. Bake for 1.5 hours at 200 ° C. Vegetables should become soft with a toasted crust.

Roasted brussels sprouts with Nabil cheese

Ingredients

  • Brussels sprouts - 1 kg
  • Olive oil - 2 tbsp.
  • Juice of half a lemon
  • Garlic - 1 clove
  • Walnuts (chopped) - 2 tbsp.
  • Nabil cheese - 50 g.
  • Salt and pepper to taste

Method of cooking

Brussels sprouts should be pre-washed and cut in half. In a large bowl, mix the cabbage with the oil, savory, lemon juice, salt, garlic and pepper. Bake for 20-25 minutes in a preheated oven, stirring to bake evenly. Remove from the oven and sprinkle with nuts, bake for another 7-10 minutes. Put the cabbage on a plate and sprinkle with chopped Nabil cheese.
